This rainbow fruit pizza is a beautiful fruit pizza topped with the best cream cheese frosting, and decorated with a variety of colored fruits, and made to look like a rainbow!
This gorgeous fruit pizza is topped with a fruit of every color of the rainbow. Red strawberries, orange mandarin slices, yellow pineapple, green kiwi, blue blueberries, and purple blackberries. You can use a variety of different fruits in these colors. You can find some ideas for other fruits you can use in our rainbow fruit kabobs post.
How to make a rainbow fruit pizza?
I love fruit pizza that starts with a sugar cookie crust. You can use store bought sugar cookie dough, like I did, or use your own favorite sugar cookies recipe. Instead of making the cookie dough into small individual cookies, you will use the dough to form one giant cookie. You can either make the cookie into a U kind of shaped like a rainbow, or just a circle like a typical pizza.
You could also use a sheet of crescent roll dough, or puff pastry dough, cut out to look like a rainbow.
After the dough is all baked up, you’ll top the pizza with your frosting. I used a homemade cream cheese frosting, because I like how the tangy cream cheese pairs with the sweet fruit. But you could also use a store bought frosting, or even some sweetened whipped cream, or marscapone cheese, or even yogurt.
Spread the frosting all over the top of the crust and then it’s time for the fruit toppings. You can start from the outside and work in or the inside and work out, from the outside you’ll do strawberries, mandarin oranges, pineapple, kiwi fruit, blueberries, and blackberries.
The beautiful fruit pizza can be cut and serve immediately, or you can cover it and refrigerate it for 2-4 hours before serving. You can make the cookie crust, and the frosting a couple days ahead of time, but the fruit is best if added only a few hours before serving.
You can wrap up the leftovers in an airtight container and store them for up to 2 days, but the fruit quality won’t stay as good, so I recommend eating as much as you can on the first day.
This rainbow fruit pizza is such a beautiful dessert. It’s so perfect for spring time, especially for a baby shower, or bridal shower, or even a spring birthday party.
It’s honestly easy enough to make though, it would be fun just to surprise your kids with it for a tasty afternoon treat.

Rainbow Fruit Pizza
Ingredients
- 16 oz sugar cookie dough (like Pillsbury)
For the Cream Cheese Frosting:
- 8 oz cream cheese (softened)
- 1/2 cup butter (1 stick, softened)
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
For the Rainbow Fruit Topping:
- 1/2 cup sliced strawberries
- 11 oz mandarin oranges (drained)
- 1/2 cup sliced pineapple
- 2 kiwi (peeled and sliced)
- 1/4 cup blueberries
- 1/4 cup purple grapes
Equipment
- Large Mixing Bowl
Instructions
- Preheat the oven to 350 degrees.
- Line a large baking sheet with parchment paper or silicone liner.
- Spread out cookie dough, and roll and shape into a rainbow shape. About 1/2 inch thick.
- Bake the cookie in the preheated oven for 10-14 minutes until the edges are lightly browned and the cookie looks barely set.
- Let the cookie cool completely to room temperature.
For the Cream Cheese Frosting:
- Put your cream cheese in a large mixing bowl and beat over medium speed until smooth.
- Add in the butter and stir till smooth.
- Add in the powdered sugar and vanilla extract and continue beating till the frosting is smooth and fluffy.
- Spread cream cheese frosting all over the top of the cooled rainbow cookie.
For the Rainbow Fruit Topping:
- Add the prepared fruit over the top of the rainbow in a rainbow pattern, red, orange, yellow, green, blue, and purple.
- Serve immediately, or chill for 2-4 hours before serving.
- Slice into long and thin pieces so each piece gets some of each of the fruits.
