Ingredients Needed
This is a quick overview of some of the ingredients you’ll need for this Ghost Scotcheroo Bars Recipe. Specific measurements and full recipe instructions are in the printable recipe card below.
- Peanut Butter: This helps give the bars their peanut butter flavor, and binds the cereal together. Creamy peanut butter works best.
- Crisp Rice Cereal: This gives the bars their signature crunch! You can use Rice Krispies brand, or any store bought brand.
- Chocolate Chips: I like using milk chocolate chips, but any chocolate chips work.
- Butterscotch Chips: This gives the scotcheroos their signature flavor, and it pairs perfectly with the peanut butter.
- White Chocolate Chips: Melted in the microwave and dolloped on top to create the little ghost shapes on top.
How to Make Ghost Scotcheroos
Step 1: Make the Sugar Mixture. Add the granulated sugar and corn syrup to a medium saucepan over medium heat. Bring the mixture to a boil, stirring occasionally, then once it is boiling remove it from the heat and stir in the creamy peanut butter.
Step 2: Add the Cereal. Pour in the rice cereal, stir it all together until the cereal is coated fully with the peanut butter mixture. Press the cereal into the prepared baking pan.
Step 3: Make the Chocolate Topping. Add the chocolate and butterscotch to a microwave safe bowl and melt in 30 second increments until you can stir it totally smooth. Pour the melted chocolate over the cereal layer, spreading it evenly until its covered.
Step 4: Make the Ghosts. Add the white chocolate chips to another microwave bowl and microwave in 30 second increments, stirring after each until its smooth and melted. Dollop portions of the white chocolate over the chocolate topping. Use a toothpick to gently pull the bottom of the dollops down to make a ghost tail. Make little ghost arms if desired. Add a couple tiny drops of melted chocolate on top for the ghost eyes and mouth. Let the bars set.
Tips and Tricks:
- Don’t Overcook: Bring the sugar and corn syrup to a boil and then remove it from the heat. If you keep cooking the sugar mixture it will make your bars hard (not soft and chewy).
- Press Gently: Press the cereal gently into the pan, you don’t want press hard or the bars will become tough and hard.
- Melt the chocolate slowly: Chocolate and butterscotch chips can harden if they’re overheated You’ll want to use short intervals in the microwave, then stir as much as you can after each time.
- Make the ghosts before the chocolate sets: Add the white chocolate dollops while the chocolate butterscotch topping is still soft so the ghosts blend in nicely.

Storage Instructions
Once the topping is set the bars can be stored in an airtight container at room temperature for up to 3 days. You can also store the bars in the fridge for up to 5 days, they will be more firm when chilled, so let them sit at room temperature for a few minutes before enjoying.

These Ghost Scotcheroos are such a fun, easy and delicious Halloween treat! They are chewy, and have the cutest white chocolate ghosts on top. You’ll love making these for your next party, and the cute ghost treats will be eaten faster than you can say Boo!
