This Thai Chicken Pizza is one of our favorite pizzas, with an amazing peanut sauce, lots of mozzarella, chicken, green onions, carrots, and cilantro – all come together to make it one of the best tasting pizzas around.
The first time I made this Thai Chicken Pizza was right after I had purchased a CPK pizza cookbook. We love their pizza and we wanted to bring their fabulous pizzas home to you. One of our favorites is the Thai Chicken Pizza. When we go to California Pizza Kitchen to eat, my mom will order it every time. She just loves the peanut sauce.
The peanut sauce is so peanut buttery and delicious, and she loves peanut butter. You can probably tell by all our other peanut butter recipes ranging from pizza, to peanut butter banana smoothies, to peanut butter ice cream, and flourless peanut butter cookies. If you love peanut butter you will love this pizza too.
This pizza is fairly easy to make, with a homemade peanut sauce, chicken, lots of cheese, cilantro, peanuts and more.
You’ll first make a homemade peanut sauce with peanut butter, hoisin sauce, and soy sauce plus a few other ingredients. The sauce comes together quickly and only takes a minute to cook. It is yummy, don’t be surprised if you are licking the spoon.

How to make thai chicken pizza?
It is helpful to use a pizza stone and pizza peel but if you don’t have them, you can use a large baking sheet and parchment paper to prepare the pizza on. Preheat your oven to 500 degrees with a pizza stone inside. Sprinkle cornmeal over a pizza peel and roll out a ball of pizza dough into a large circle about 1/2 inch thick.
Also plan to chop the cooked chicken or if you are using rotisserie chicken, shred it for 1 cupful of chicken. Slice the green onions, and shred the carrots – I recommend starting with a whole carrot, I have used baby carrots before because it is all I had in the house and that takes a very long time, – and then shred the cheese. Once this is all prepared you are ready to assemble the pizza.
You will spread the peanut sauce all over the prepared pizza dough, the sauce is thick so spread it right to the edge of the dough, it is not going to run off. Sprinkle 3/4 of a cup of mozzarella cheese over the peanut sauce, then top with half the chicken, green onions, carrots, and bean sprouts. Top with another 1/4 cup of mozzarella cheese, we told you this was nice and cheesy.
Save the other half of everything for the second pizza. Yes, the recipe makes two Thai chicken pizzas, aren’t we so lucky.
The pizza peel makes it easy to slide the pizza onto the prepared pizza stone for baking. If you have used parchment paper, slide the pizza onto the baking sheet or stone as best you can. It should still slide off because the cornmeal is used to prevent it fromsticking, but the pizza peel is so easy to use. Bake the Thai chicken pizza for about 12 minutes until the edges of the crust are golden and the cheese is nice and melted. Remove the pizza from the oven by pushing the pizza peel right underneath it again to get it out of the oven.
While the pizza is baking, use this time to mince the peanuts and tear the cilantro for the final touches. You can also prepare the 2nd pizza on parchment paper so it is all ready to go into the oven. If you have a pizza peel don’t prepare the 2nd pizza on the peel because you will use it to remove the first pizza from the oven. Once the first pizza is baked, remove it from the oven and sprinkle half the peanuts and cilantro on top.
Repeat the steps for the 2nd pizza and have it baking while you are slicing and eating your first Thai chicken pizza. Once you are finished eating it, you are going to be grateful for that 2nd pizza to enjoy. Serve it with this amazing Thai Salad, you won’t regret the yummy flavors.
This Thai chicken pizza is so good you’ll feel like you’re going out to a yummy pizza restaurant, but instead you can enjoy it in the comfort of your own home.

We love pizza in our family, and have it every one or two weeks as well. What other recipes do you love from this book? I want to try the southwest chicken, blt and maybe some others. What should I try first?
Have you found any tricks on how to speed up the process of the dough making? Do you prepare it the night before like the book says?
