These grilled Teriyaki Chicken Sandwiches will quickly become your new favorite chicken sandwich to make at home. With juicy chicken marinated in a pineapple teriyaki sauce, grilled pineapple, and melty cheese. They’re easy to make and perfect for a summer lunch or dinner!
One of my favorite sandwiches to order, when its on the menu, is a teriyaki chicken sandwich, or sometimes called a Hawaiian chicken sandwich, and this is my homemade version.
The sandwich has a thick piece of chicken breast, marinated in teriyaki sauce, and grilled to juicy perfection. Then its topped with grilled sweet pineapple, melty Swiss cheese, red onions, lettuce tomatoes, all on a soft bun. Sounds delicious right? Because it is.
This sandwich is quick and easy, and packed full of flavor. Perfect served up with a side of Macaroni salad, Frog eye salad, or Chicken pasta Caesar salad. For another chicken dinner favorite, try these baked chicken thighs.

- Quick and Easy – The chicken should be marinated for about an hour, but in a hurry 10 minutes will do. Then you can be grilling and eating these tasty sandwiches in no time. They can be on the table in less than 30 minutes, tops!
- Juicy and Flavorful Chicken – The chicken is marinated in an easy 4 ingredient marinade that helps tenderize the meat, and adds such a nice sweet flavor too. Be sure to cook the chicken just until it reaches 165 F internally to keep it nice and juicy too.
Ingredients Needed
This is a quick overview of the ingredients you’ll need for this Teriyaki Chicken Sandwich Recipe. Specific measurements and full recipe instructions are in the printable recipe card below.
- chicken breasts – you’ll want 2 to 4 boneless skinless chicken breasts depending on the size of those. You’ll want enough for 4 sandwiches
- teriyaki sauce
- pineapple juice – if you’re using canned pineapple rings, you can use the juice from the can.
- soy sauce – I like low sodium soy sauce
- hoisin sauce
- swiss cheese
- toppings – lettuce, tomatoes, and red onion are my favorites
- brioche hamburger buns
Sandwich Topping and Variation Ideas
This sandwich is super customizable, and can be adapted to fit your taste preferences. Here are some of my favorite ways to switch it up.
- Different Cheeses: Try pepper jack cheese, Provolone cheese, or Colby Jack cheese.
- Try Chicken Thighs: Instead of chicken breast, try using boneless, skinless chicken thighs instead
- Add slaw: Add a nice, slightly sweet, slightly tangy cabbage slaw on top of the chicken.
- Different Veggies: I used lettuce, tomatoes, and red onion on my sandwich for these photos, but I also love adding red bell pepper slices, avocado, cucumbers, or banana peppers. Use whatever sounds good to you.
- Add bacon: Crispy bacon is always a good idea.
- Condiments: Add a variety of condiments to your sandwich, some favorites are mayonnaise, spicy mayo, barbecue sauce, honey mustard, or extra teriyaki sauce.
How to make Teriyaki Chicken Sandwiches?
Step 1: Marinate the Chicken. Whisk together the Teriyaki sauce, pineapple juice, Soy sauce, and Hoisin sauce in a small bowl. Pour it over the chicken in a large ziplock bag, or airtight container. Place it in the fridge to marinate for 30 minutes to 1 hour.
Step 2: Grill the Chicken. Add the chicken to a grill or grill plate pre-heated to medium high heat. Cook the chicken for about 3 to 5 minutes per side, until the chicken reaches an internal temperature of 165 F. Add the pineapple rings to the grill to cook. Add the cheese slices on top of the chicken and cook until melted.
Step 3: Assemble the sandwiches. Take a bun, top it with a cheese topped chicken breast, pineapple ring, lettuce, onion, tomato, and close it up. Enjoy the sandwiches immediately. Preferably outside on a nice, warm day.
Storage Instructions
If you have extra cooked chicken breasts, you can store them in an airtight container in the fridge for up to four days.
You can reheat the chicken in a saute pan, or in the oven at 350 F until it is hot throughout. Add extra cheese on top if desired.
You can also eat the chicken cold from the fridge. It’s delicious sliced up and added to salads.
What to serve with sandwiches
These chicken sandwiches are packed full of flavor, and are great with a variety of side dishes.
- Fresh green salad – loaded with crunchy lettuce, veggies, and topped with your favorite dressing like homemade ranch dressing, or a vinaigrette.
- French fries – I love going easy and grabbing frozen fries from the grocery store, and cooking them up in the air fryer.
- Pasta Salad – Summer meals always make me want pasta salads. Try out creamy pasta salad, or southwest pasta salad.
- Fresh Fruit – Fresh cut up fruit, or a quick and easy fruit salad is the perfect sweet balance to these sandwiches.
- Roasted Veggies – Toss your favorite vegetables in a little olive oil and salt and pepper and bake them up, or even grill them in a grill basket, right next to the chicken and pineapple. Or try these Grilled Veggie Skewers, they’re a huge hit!

Teriyaki Chicken Sandwich
Ingredients
For the Marinade:
- 1/3 cup teriyaki sauce
- 1/3 cup pineapple juice
- 2 TBS soy sauce
- 2 TBS hoisin sauce
For the Sandwiches:
- 4 chicken breasts (cut ends off if they're too large for a bun)
- 4 pineapple rings
- 4 slices Swiss cheese
- 1 tomato (sliced)
- 1/4 red onion (sliced)
- romaine lettuce
- 4 brioche hamburger buns
Instructions
For the Marinade:
- Add the teriyaki sauce, pineapple sauce, soy sauce, and hoisin sauce to a small bowl and whisk them together. 1/3 cup teriyaki sauce, 1/3 cup pineapple juice, 2 TBS soy sauce, 2 TBS hoisin sauce
- Pour the marinade over the chicken breasts in a ziplock bag, or airtight container. Place in the fridge for 30 minutes, up to to 2 hours. 4 chicken breasts
For the Sandwiches:
- Preheat the grill, or a grill plate to medium high heat.
- Add the chicken to the grill and cook for about 3 to 5 minutes. Flip the chicken and cook for another 3 to 5 minutes, until the chicken reaches an internal temperature of 165 F.
- Add the cheese slices on top of the chicken and cook for about 1 minute, or until your desired meltiness is reached. 4 slices Swiss cheese
- Place the pineapple rings on the grill and cook for 1 to 2 minutes, flipping half way through, until hot. 4 pineapple rings
- Assemble your sandwiches by taking a bun, chicken pieces, pineapple, and your choice of toppings. romaine lettuce , 1/4 red onion, 1 tomato
- Enjoy right away.
