Ingredients Needed to make Banana Blondies:
- all purpose flour
- baking powder
- sea salt
- unsalted butter
- brown sugar
- mashed banana
- egg
- vanilla extract
- cream cheese
- powdered sugar
How to make Banana Blondies?
- Mix together the flour, baking powder and salt in a large bowl and set them aside.
- In another bowl add the melted butter, brown sugar, mashed banana, egg, and vanilla. Stir them together until combined.
- Add the dry ingredients to the wet ingredients and stir them together.
- Spread the batter into a prepared baking sheet. And bake the bars for 30 to 35 minutes, until the edges are golden and a toothpick inserted in the middle comes out clean.
- Let the bars cool completely.
- Add the cream cheese and butter to a large bowl and mix them together until smooth.
- Then add in the powdered sugar and vanilla and mix until the frosting is light and fluffy.
- Spread the frosting over the top of the bars. Slice them up and enjoy.
Tips and Tricks:
- Try browning the butter in the blondies (and frosting if you want) to add a delicious nutty and carmely taste to the bars.
- Add in up to 1 cup of your choice of mix-ins to the cookie bars. You can add any type of chocolate chips, chopped nuts (walnuts, or pecans), chopped Oreos, etc.
- You can substitute your choice of frosting for the bars, if desired. Some other options are vanilla buttercream, chocolate buttercream, cinnamon cream cheese frosting, peanut butter frosting, brown sugar frosting, etc.
- The bars are also delicious unfrosted as well.
- Cut the bars into smaller pieces if desired. They are rich, and can definitely be portioned smaller, though you may not want to share.
How to store Banana Blondies?
If the banana blondies are frosted as directed in the recipe below, I recommend storing them in one layer, and not stacked, in a container with a lid. They should be stored in the fridge if frosted, and can be stored for up to 4 days.
If left unfrosted the bars can be stored at room temperature in an airtight container for up to 3 days.
The bars can also be frozen for up to 3 months. Freeze them spread out on a cookie sheet, then once frozen you can wrap them individually in plastic wrap. Then place them all in a zip top bag or other freezer safe container. Let them thaw in the fridge overnight before enjoying.
These banana bars are a delicious soft banana dessert. They’re perfect to serve for a spring or summer event, or just for an afternoon or evening treat any day of the week.

I haven’t tried it, so I can’t say for sure but I think a 1:1 sub should work.
