How to make Bacon Goat Cheese Pizza
Step 1: Caramelize the Shallots. Add olive oil and shallots to a skillet over medium heat. Once hot lower the temperature to medium low. Cook for 10-20 minutes, stirring occasionally until the shallots are soft and caramelized. Remove from the heat.
Step 2: Roll out the pizza dough. Sprinkle a pizza paddle with corn flour (a mix of corn meal and all purpose flour) and roll out the pizza dough into a large circle, about 1/4 to 1/2 inch thick, and about 12 inches in size. Add the fig jam. Spread the fig jam evenly on the pizza dough, to about 1/2 inch of the edge of the dough.
Step 3: Add the toppings. Sprinkle mozzarella cheese evenly over the top of the pizza. Top it with crumbled bacon, and caramelized onion. Crumble the goat cheese and spread it evenly over the pizza.
Step 4: Bake the pizza. Bake the pizza in a preheated pizza oven, or oven preheated with a pizza stone. Bake until the cheese is melted and the crust is golden brown. Garnish and Serve. Top the pizza with fresh herbs, a drizzle of balsamic glaze, and fresh arugula if desired. Slice it up and enjoy.
Tips and Tricks
- Pre-heating your oven – Turn your oven as hot as it will go (usually around 500 F) for 30 minutes to 1 hour before cooking your pizza. This will give your pizza oven time to preheat fully, and really give you nice crispy crust on your pizza.

Goat Cheese Pizza
Ingredients
- 2 TBS olive oil
- 3 shallots (quartered)
- salt
- pepper
- 1 pound pizza dough (for 9 inch pizza)
- 1/4 cup fig jam
- 2 cup shredded mozzarella cheese
- 6 slices bacon (cooked and crumbled)
- 4 oz goat cheese
Instructions
- Preheat the oven to 500 degrees Fahrenheit. Place the pizza stone inside while the oven is heating up
- Add the olive oil and shallots to a saute pan and cook over medium heat. Sprinkle with salt and pepper. 2 TBS olive oil 3 shallots, salt, pepper
- Lower the temperature and cook another 10-20 minutes, stirring occasionally until the shallots are soft and caramelized. Remove from the heat and set aside.
- Divide the pizza dough into 2 to 3 portions. On a pizza peel sprinkled with corn flour roll out one portion of pizza dough to about 9-10 inches diameter and 1/4 inch to 1/2 inch thick. 1 pound pizza dough
- Spread the fig jam out on the dough, to about 1/2 inch of the edge. 1/4 cup fig jam
- Sprinkle the shredded cheese over the top of the jam. 2 cup shredded mozzarella cheese
- Sprinkle the bacon pieces evenly over the top of the cheese. 6 slices bacon
- Spread the caramelized shallots evenly over the cheese too.
- Crumble the goat cheese evenly over the top of the cheese. 4 oz goat cheese
- Transfer the pizza carefully to the preheated pizza stone in the oven.
- Bake for 10 to 15 minutes, until the cheese is melted and the crust is golden.
- Remove the pizza from the oven, and garnish the pizza with fresh basil, parsley, or arugula.
- Let the pizza cool for 3 to 4 minutes, then slice and serve warm.
